Darren Upshaw

Sous-Chef

Darren was born and raised in Hants County, Windsor, Nova Scotia. He gained his appreciation of fresh food ingredient growing up on the family farm where he helped attend to the livestock and vegetables garden. He completed the Business Program at Kings Regional Vocational School. From Windsor he relocated to Halifax and turned to fine dining Italian Cuisine at Cafe San Marco and later Freeman's Little New York.

Darren, looking to expand his culinary skills, moved to Toronto where he prepared meals for patrons at the CN Tower's 360 degree Restaurant and Banquets. Darren's move to the West Coast sent him to Victoria where he became Kitchen Manager of Rebar Modern Food Restaurant, working with the owner to maintain continuity, integrity and quality of Rebar’s innovative restaurant concept. His role included the sourcing & ordering of locally grown organic produce. He was also a member of the Development Team for their famous Rebar Modern Food Cookbook which features recipes from their mostly vegetarian menu.

Darren joined the Emelle's team in October 2003, as one of our catering chefs. He later took over our Urban Diner Deli, showcasing his fresh flair. We were happy to promote Darren to Sous-Chef in 2005 where he has quickly gained a loyal following for his smashing soups and delicious entrees.
